Chicken Stew (to eat with your Jollof Rice)

Jollof rice tastes great by itself but if you were looking to add that extra bit of goodness you this chicken stew recipe add just that.

Chicken Stew Recipe

Ingredients:

  • Chicken thighs
  • 1  small red onion
  • Vegetable Oil
  • Salt
  • Leftover Jollof rice paste from jollof rice recipe
  • 105g Tomato purée
  • curry powder
  • thyme
  • crayfish ( 1 cube and 1 tbsp powdered crayfish, this combo highlight the flavours more)

Method:

  1. On high heat oil a small pot using vegetable oil
  2. Let the onions brown and add your chicken thighs, allow the chicken thighs to brown just a little on the outside
  3.  Turn the stove on to medium heat
  4. add  the tomato purée
  5. add 2 cups of jollof paste/ how much you have leftover  from cooking your jollof
  6. Allow the paste to simmer as this will allow the inside of the chicken to cook (chicken thighs are better than chicken breast because chicken breast cook much quicker and there is a risk of overcooking chicken breast)
  7. When the inside of the chicken cooked and tender turn the heat off and serve!
  8. *if you have leftover stew you can freeze it for another time!*
