Soft Chocolate Filled Cookie Recipe
Who doesn’t love warm, soft, chocolate filled cookies? If you have seen the other recipes on this blog you’ll know that i have posted another recipe too! But these cookies are everything you need whilst watching your favourite Netflix series with a warm cup of tea 😉
Ingredients:
- 120g soft butter
- 100g sugar
- 1 egg
- 220g plain flour
- 1 tsp baking powder
- Chocolate Chunks (52-70 percent cocoa)
Yep! You only need 6 ingredients and 11-15 minutes of baking time to cook these wonderful chocolate filled cookies!
Method:
(you can skip to the video below if you’d prefer watching the method)
- cream together the butter and the sugar until you obtain a bread like consistency
- Add your egg in a beat it until it is well incorporated
- Sieve your flour and your baking powder in and fold into the mixture
- The dough should feel soft and do not worry if it is a little sticky just add some flour on you work top and form a large ball
- Refrigerate the dough for 10 minutes (during this time you can preheat your oven at 180 degrees/ 356 Fahrenheit)
- After the 10 minutes have past you can form tablespoon sized pieces of dough, form a ball then using you fingers form a well/ a hole where you will place a medium sized piece of chocolate chunk
- ( for the chocolate some people like freezing scoops of Nutella and then placing that into the dough of the cookies, which works absolutely beautifully too!)
- Fold the dough over the chocolate and and place on a baking tray, i like adding chocolate chips and grating pieces of chocolate over the cookies too
Finally: Place the cookies into the oven at 180 degrees/356 Fahrenheit for 11-15 minutes
     Enjoy!
